Loom & Leaf can be a great choice. It is a high-density memory foam preferred by mostly front back and even side sleepers.
You can try Winkbed and it’s not memory foam or nest hybrid latex. i am not sure if you are going to like purple, i would highly recommend purple 4, but it's too expensive for most people. Based on everything you told me Sapira is another perfect option.

For a 2 year we would suggest you foam mattress. You can’t have a spring. You can have the soft version of Muse mattress.
AS5 is better for side sleepers. Basically softer will be better for the side sleeper. If it is too firm, your shoulder will feel much pressure and will wake up in pain.
For the pain relief, we would carefully recommend Loom & Leaf and Purple

Since both of you have different body, sleeping position and habit, we would recommend other mattress, called Helix Luxe. The good thing about this mattress is that you can have different comfort level in one mattress. (Split)

Brentwood is a better choice. But Brooklyn Bedding Aurora is much better than both of them. If you do not want foam then another great option is Nest Bedding hybrid latex. I would go with their firm. Medium is a bit to soft in my opinion
